Torsten Vildgaard
FZN by Björn Frantzén
Torsten Vildgaard is the Executive Chef of FZN by Björn Frantzén in Dubai. His culinary foundation was built at Copenhagen's renowned Noma, where he served as Head of R&D under René Redzepi. Prior to that, he trained under Nordic pioneers at Tinggården.
He later opened his own restaurant, Studio, in Copenhagen, earning a Michelin star within four months. Chef Vildgaard was also named Denmark's 'Chef of the Year' through national competitions.
Now leading the kitchen at FZN within Atlantis, The Palm, he applies his Nordic expertise on a global stage. Under his direction, the restaurant has received three Michelin stars, GreatList award, four Gault&Millau toques, and multiple 'Restaurant of the Year' awards in Dubai for 2025.
