Chef Giovanni Ledon, originally from Las Vegas, is the Executive Chef of Akira Back Dubai. Inspired by his parents’ restaurant, he graduated from The Culinary Institute of Las Vegas in 2007.

His career includes training under Chef Raimund Hofmeister and key roles with Chef Bobby Flay at Mesa Grill. In 2010, he became Sous Chef at Yellowtail in Bellagio under Chef Akira Back, deepening his expertise in Asian cuisine over seven years.

Now leading Akira Back Dubai at W Dubai — The Palm, his focus is on delivering exceptional food and hospitality. The restaurant is listed in the Michelin Guide (2022, 2023) and has received multiple UAE awards.

Chef Giovanni has also overseen successful restaurant openings this year in Riyadh, Doha, and Paris, driven by his passion for excellence and guest satisfaction.

Dubai has countless amazing food options, but my go-to guilty pleasure is the ramen at Daikan in Palm Jumeirah Mall. It’s super convenient for me, and the ramen is always packed with flavor. Be sure to get a side of kimchi to enjoy with it!
