After relocating from Europe, he dedicated a year to deep study of local traditions, including fieldwork hosting preview dinners. His tasting menus, which became instant signatures, showcase Emirati culture with modern insight. Under his guidance, Gerbou’s menu earned the 2025 Prix Versailles award for architecture, honoring its cultural and aesthetic vision.
