L'atelier De Joel Robuchon

Chef Ivan Russo's culinary career began in traditional Italian kitchens at age 15. He furthered his training at ALMA, the prestigious culinary school in Colorno, Italy.

He gained significant experience in Michelin-starred Italian restaurants, working under Chef Rocco De Santis at one-star Vistamare and Chef Valeria Piccini at two-star Da Caino.

In 2017, Chef Russo moved to Paris to join the team at Joël Robuchon Saint-Germain, advancing from a commis position and deepening his expertise in the Robuchon culinary tradition.

In October 2020, he relocated to Dubai for the opening of L’Atelier de Joël Robuchon, where he was appointed First Sous Chef. Since 2024, he has served as Head Chef of the restaurant, leading the kitchen with a focus on precision and consistency while upholding the standards of Robuchon’s cuisine.

As a chef, I’m sensitive to the details on how a sauce is built, how fish is cooked, and how the rhythm of a dinner is held from start to finish.
