Carmen Rueda Hernandez is the Executive Pastry Chef overseeing the dessert programmes at BRIX Journey, BRIX Café and 3Fils in Dubai. In 2025, she was named Middle East & North Africa’s Best Pastry Chef by Valrhona. Her work is central to several of the city’s most acclaimed projects, including 3Fils, Brix Café and Brix Dessert — Dubai’s only dessert tasting menu — all recognised by MENA’s 50 Best Restaurants and the GreatList Guide. Trained in influential kitchens such as The Fat Duck and El Bulli, Carmen is known for her precision, restraint and quietly confident style, moving effortlessly between savoury and pastry with a rare sense of balance.
