Marques Tone
Marques Tone is Head Chef of COYA Dubai, with over 15 years of international culinary experience in London, Mumbai, and Dubai. He holds a bachelor's degree in Hotel & Tourism Management and a postgraduate diploma in Culinary Arts from West London College.
His career began in London at Gordon Ramsay’s restaurant. Following his relocation to Dubai in 2010, he held senior roles in fine dining before first joining COYA Dubai as Junior Sous Chef in 2014, where he developed expertise in Peruvian cuisine.
After a period working in other high-profile Dubai establishments, he returned to COYA Dubai as Head Chef in January 2023. His current responsibilities include menu development, team training, and overall kitchen leadership. Under his direction, the restaurant has been listed in the GreatList and Gault&Millau UAE Guide, with a continued focus on culinary progression.
