Chris Malone is an Australian chef and Head Chef of Dinner by Heston in Dubai, with 16 years in world-class fine dining. He trained in Perth, eventually running the two-hatted Clarke’s of North Beach, before joining Daniel Humm’s team at Eleven Madison Park in New York. He later moved to London, helping open Davies and Brook and working in the kitchens of Björn Frantzén and Heston Blumenthal.
In Dubai, Malone has been central to key Michelin achievements, including the launch of the three-starred FZN and leading the star-retention of Ossiano. At Dinner by Heston, he continues this legacy with food that is produce-driven, precisely executed, and defined by vibrant flavor clarity.
