Kyungsoo Moon

Chef Moon is the Culinary Director at Sunset Hospitality Group, overseeing SUSHISAMBA Dubai and Attiko, with a primary focus on HANU. His career spans more than 20 years across Dubai, Singapore and Australia. Trained in Korea with a foundation in edomae sushi and kaiseki, he began his international career in Dubai before moving to Singapore, where he led the opening of Mikuni at the Fairmont Hotel and received the Asian Cuisine Chef of the Year award in 2013. In Australia, he developed the Japanese dining concept Kisumé. Known for disciplined technique and respect for authentic flavours, Chef Moon now leads culinary operations and menu development at HANU, recognised by the GreatList Guide in 2025.
