Paco Morales
Paco Morales is an Executive Chef with over 18 years of international culinary experience in fine dining, luxury hotels, and high-volume kitchens. His career has taken him through Michelin-starred establishments across Spain, France, and the United Kingdom, including roles at Abantal (Seville), Zortziko (Bilbao), La Chapelle St Martin (Limoges), and L’Atelier de Joël Robuchon (London).
He has held senior positions in prominent restaurant groups, serving as Head Chef at Sushi Samba Covent Garden and as Sous Chef at Sushi Samba City in London. Prior to his current role, he was the Executive Chef for the Palocortado restaurants group and Blue Marlin Ibiza Sky Lounge in Gran Canaria.
Since December 2022, Paco Morales has been the Executive Chef at SLS Hotel Dubai, where he oversees culinary operations.
